Crispy Breaded Chicken & Garlic Mashed Potatoes

I decided that I had to start eating all of the chicken I have been hoarding throughout the month. But I am not a huge chicken fan so I decided to make it a little more flavorful. This is super easy and you can season these as much or as little as you would like. Enjoy!

Crispy Breaded Chicken

Ingredients:

  • 1 pound chicken breast
  • 3 cups corn flakes
  • 2 eggs
  • 1/2 cup milk
  • salt&pepper
  • garlic salt
  • chili powder
  • seasoning salt

Directions:

  • Get out three pie plates and fill one with crushed corn flakes and all the seasonings, one with milk, and the last with two eggs whisked together. Make sure your chicken is defrosted and start by dipping the chicken in the milk then dip it into the corn flakes, eggs, and lastly the corn flakes again. Bake on a cooking sheet at 375 degrees for 30 to 35 minutes. Make sure it is the correct internal temperature!
  • Tip: if your chicken is not fully cooked but you fear it is getting dry, pour a teaspoon of olive oil on top of the chicken breasts to help the dryness of the chicken.

Garlic Mashed Potatoes

Ingredients:

  • 5-6 potatoes
  • 1/4 cup milk
  • 1/2 stick of butter
  • 2 tsp garlic salt ( you can add more if you like garlic)

Directions:

  • Boil potatoes until you can stick a fork into them and it falls out easily, drain. Then grab your hand mixer. I use a hand mixer to get the clumps out because Jordan hates clumps. Add the butter, milk, and garlic salt.Mix potatoes until smooth and creamy. You can add more or less if you prefer less or more creamy potatoes. And that is it!
